Selecting a text encoding
Most webpages specify a text encoding that determines how characters are displayed in the page. However, some webpages do not specify a text encoding. When you open one of these webpages, Safari uses the default text encoding selected in the Appearance pane of Safari preferences.
To avoid seeing garbled text, select a default text encoding that corresponds to the characters of the language used in the webpages you open most often. For example, if you primarily open pages that use Japanese characters, then you should change the default text encoding to one of the Japanese encodings.
Choose Preferences from the Safari menu and click Appearance. Choose the appropriate encoding for the webpages from the Default Encoding pop-up menu.
If the text in a page you open is garbled, you can change the encoding used for that page. Choose Text Encoding from the View menu and choose an appropriate encoding for the page.
Some websites are available in several languages and Safari can open pages in your preferred language automatically. Selecting a text encoding does not set your preferred language. To set your language, use the Language pane of International preferences.
